Pinotage Berry Reduction Steak
Grilled beef steak coated in a delightful combination of Pinotage, berries, balsamic vinegar and honey and perfectly paired with a glass of Pinotage.
INGREDIENTS:
750 ml Pinotage wine
4 beef steaks (such as ribeye or fillet)
1 cup fresh mixed berries (strawberries, raspberries, blueberries)
2 tablespoons balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
Salt and black pepper to taste
Fresh thyme sprigs for garnish
INSTRUCTIONS:
- In a saucepan, combine the Pinotage wine, mixed berries, balsamic vinegar, and honey. Bring the mixture to a simmer over medium heat.
- Let the wine mixture cook until it reduces to a thick, syrupy consistency, stirring occasionally. This will take about 20-25 minutes. Remove from heat and set the berry reduction sauce aside.
- Preheat a grill or skillet to medium-high heat. Rub the steaks with olive oil and season with salt and black pepper.
- Grill or sear the steaks to your desired level of doneness. Rest the steaks for a few minutes before slicing.
- Drizzle the Pinotage berry reduction sauce over the sliced steaks and garnish with fresh thyme sprigs.
- Serve the Pinotage berry reduction steak with a glass of Pinotage for a delightful pairing that complements the wine's fruity and earthy notes.
